Immerse yourself in the art of crafting exceptional sushi with our skilled Chef Manager, Mathew Ludlow. From developing the delicate knife techniques needed for sushi preparation to washing and cooking the rice, preparing sushi vinegar, rolling, cutting, and understanding the ingredients used, you’ll leave this Birmingham sushi class with the knowledge needed to make your own superb sushi at home.
From hosomaki to uramaki rolls, you’ll learn how to prepare four different types of sushi in your own kitchen with skill and confidence.

With over 12 years of experience in fine dining kitchens and gastro pubs, Matthew will guide you with his knowledge and passion for crafting sushi that’s both beautiful and delicious.

Course run-down
Morning session: In the morning you’ll be introduced to key sushi skills, such as washing and cooking rice and using and preparing rice vinegar to create moreish sushi dishes. You’ll learn how to create Nigiri and Uramaki Rolls with exceptional ingredients such as chalk stream trout, tamagoyaki, spicy tuna, mango, cucumber and more.
Lunch: We’ll break for a delicious lunch together enjoying the dishes you've created and you’ll be immersed in Japanese culture throughout the day as you enjoy sake, plum wine and Japanese beer.
Afternoon session: In the afternoon you’ll be introduced to Futomaki Rolls and Hosomaki and learn how to craft these traditional Japanese delights with fresh ingredients, such as chicken Katsu, trout, unagi rolls and avocado. Throughout the day you’ll also learn about ingredient preparation, rice preparation and how best to store your rice and sushi.
