Overview
This intensive course is tailored for novices and offers a practical deep dive into mastering various fish handling and cooking techniques.
In just one day, you’ll experience hands-on cooking of different seafoods - including crab dressing, squid preparation and crafting a moreish Moules Mariniere with fresh mussels for lunch. You’ll leave the course equipped with expert knife skills and the know-how in scaling, filleting and hot smoking fish.
Working with fish can be daunting, but you’ll leave this course feeling empowered to navigate the world of seafood preparation and cooking like a seasoned pro.

Steven Lamb is an award-winning author, culinary consultant, teacher and presenter. After a background in media, Steven’s food career began nearly 20 years ago, and in that time, he’s built up an extensive knowledge of food and a winning reputation on the culinary scene. With a natural talent for live hosting and interviewing, you’ll often find him at the best food shows and festivals - leading cookery demonstrations or hosting celebrity chefs.

Course run-down
9.30 – 10.00: Welcome! Start the morning with a tea or coffee.
Morning session: The day starts with a brief introduction to the seasons of the sea and the sustainability of fish. We’ll then learn to scale and fillet a flat fish, which we’ll later hot smoke. Next, we’ll prepare and fillet a round fish using a different technique and cook it to enjoy at lunch. We’ll also make a tasty Moules Mariniere starter.
1.30 – 2.15: Lunch
Afternoon session: In the afternoon we will cook, pick and dress a crab, hot smoke the flat fillet from the morning session and create delicious calamari. To finish off the day, you’ll be shown how to make a mackerel parcel.
4.30: Head home with a digital book of methods and recipes to show off your newfound culinary confidence!
