In this one-day course, you’ll master the art of breaking down a venison carcass into mouthwatering cuts, plucking and drawing pheasant or partridge for cooking and skinning and jointing rabbit for the pot.
Led by an expert guide, this course will help sharpen up your culinary game, eat more sustainably and keep your wallet happy.

Course run-down
9.30 – 10.00: Welcome! Start the day with cup of tea or coffee
Morning session: We’ll kick off with a brief introduction to the qualities of game and where to source it before we begin breaking down a venison carcass into joints and cuts. We’ll then mince venison shoulder to turn into burgers to tuck into at lunch.
1.30 – 2.15: Lunch
Afternoon session: After lunch, we’ll skin, joint and cook rabbit to take home before finishing with a hot smoked brined pheasant breast and venison carpaccio.
4.30: Head home with digital access to methods and recipes to continue your game journey!
