Overview
Dive deeper into the art of crafting exceptional sushi with the expert guidance of our Chef Manager, Mathew Ludlow. Designed for those with a foundation in sushi-making, this advanced sushi class in Birmingham will refine your mastery of washing and cooking rice, rice vinegar, ingredient preparation, rice preparation and storage, and whole fish preparation.
You’ll leave with the expertise to create multiple different sophisticated sushi types right in your own kitchen, as well as tempura and tamagoyaki.

Mathew, who brings over 12 years of experience in fine dining kitchens and gastro pubs, will share his passion and expertise, helping you craft sushi that’s as stunning as it is delicious.

With over 12 years of experience in the hospitality and catering industries, Matthew has extensive knowledge of crafting delectable dishes for various venues, from fine dining kitchens to gastro pubs. Classically French-trained at UCB, Matthew has a strong background in fresh-from-scratch food, including crafting magnificent, moreish sushi. As Chef Manager at Xcelerate with Edgbaston, Matthew shares his exceptional culinary skills and strong passion for fresh, flavourful food – with sushi being a particular favourite.

Course run-down
Morning session: In the morning session, we’ll dive into the essentials of Nigiri, using fresh ingredients such as Chalk Stream trout, fresh tuna, cucumber, avocado, and prawn. Then, we’ll learn how to craft Uramaki rolls with delicious fillings such as California trout, tuna avocado, spicy tuna, mango cucumber, and avocado cucumber.
Lunch: We’ll break for a delicious lunch together enjoying the dishes you've created and you’ll be immersed in Japanese culture throughout the day as you enjoy sake, plum wine and Japanese beer.
Afternoon session: In the afternoon you’ll be introduced to Futomaki Rolls and Hosomaki and learn how to craft these traditional Japanese delights with fresh ingredients, such as chicken katsu, trout, unagi rolls and avocado. You'll also learn how to make tempura and tamagoyaki.
You'll gain extensive knowledge throughout the day at our advanced sushi class in Birmingham and go home with inspiring skills and techniques to try in your own kitchen.
